What do you do to show your loved ones you appreciate them? I like to make little mini-albums for my husband, and do them a few times during the year. We also make a point to tell each other “I Love You” at least once a day! I’ve always thought it was cute when Mothers put little love notes in their kids lunch, so I’m planning to do that once my son is old enough to go to school. I hope you have a wonderful, love filled day!

February Desktop Freebie!!

Hi Everyone! Amber here with a desktop wallpaper freebie for the coming month. February 14th is Valentine’s Day in the United States, so I made a love themed desktop to share with everyone. I don’t like to have a calendar on my desktop, but there is plenty of room to add one if you so desire. There are a couple size choices in the download, and I’ve also included a version for our friends using MAC. My husband is a MAC person, so I just included the copy I made for him. I stay as far away from his computer as I can, so I admit I don’t know much besides the fact that the icons go on the opposite side as a PC! I hope it works. I used SuzyQ Scraps newest digital scrapbooking kit Love Monsters. If you haven’t picked this one up yet, you need to! This is by far one of the cutest kits I’ve ever seen, and it’s just so much fun to use.

Sneak Peek for 1/22!

Wow! I can’t tell you how much I adore the new digital scrapbooking kit that will be released tomorrow by SuzyQ Scraps. This kit is just as cute as all of SuzyQ’s other kits, but it’s just so darn unique. I haven’t seen anything like it before, and I’m really looking forward to using it for a few hybrid projects I’ll be working on for Valentine’s Day. There will also be a new alpha coming out, which you can get a little look at in this sneak peek I’ve prepared for you:

From My Table To Yours

I thought it would be a nice change of pace to share something today that is not related to digital scrapbooking! At the start of the new year many people make resolutions to lose weight or improve their health, so I’m sharing one of my favorite recipes to help with those goals. It’s delicious, but also is good for you! Now I can’t take credit for this recipe because I found it at the Whole Food’s Market website.

Italian Sausage with Zucchini and Tomatoes

Ingredients
6 links sweet italian sausage
2 tbsp. extra virgin olive oil
4 to 6 large garlic cloves, finely chopped
3 tbsp. fresh oregano, finely chopped
1 lb. zucchini, cut into ½ inch pieces
¾ lb. mixed red and yellow cherry tomatoes, halved
½ cup fresh basil, chopped
salt and pepper to taste

Method
Prepare sausages according to package directions, either in a sauté pan or on the grill. If they are pre-cooked you can just slice them up now. While they are cooking, heat olive oil in a large heavy sauté pan over medium high heat. Add garlic and oregano, stir for a few seconds, then add zucchini and cook 3 to 5 minutes.

When sausages are cooked, cut into large bite-sized pieces and add to pan along with tomatoes, basil, salt and pepper. Continue to sauté until tomatoes are just softened, about 1 minute more. Transfer to a large platter and serve.

I made this for dinner last night and took some pictures along the way. This is a very easy recipe and takes about 30 minutes from start to serve!

Gather your ingredients. You’ll notice that I didn’t have any fresh herbs, so I used these fresh-like herbs in a tube. They taste just as good as real fresh herbs, and are great to have on hand for emergencies.

The recipe intends for you to use un-cooked sausages, but I prefer to get the pre-cooked kind. I find it makes the recipe even faster to prepare and that’s a good thing for me! More time for scrapping!! Since I can skip the step of cooking the sausages I cut up everything before I start. Also notice that gigantic pile of garlic! Don’t skimp on the garlic…it’s what really makes this recipe come alive! You can chop the garlic finely as the recipe calls for, but I find it quicker to use a microplane grater or even a regular grater that has a small tooth option.

Now you can start the recipe going. Be sure not to leave the garlic and oregano cooking in the oil too long. It will burn! Just a few second like the recipe says.

When you add a new ingredient into the pan, be sure to stir it well to get each piece coated in the garlic & oregano mixture. It will infuse the vegetables with a great flavor.

And here is the final product! So yummy, and it’s good for you. Most people thing healthier food options have to taste bland, but with the addition of some herbs you can get food that tastes good and is good for you.

Sneak Peek For This Week

Let’s Talk About Gift Giving from the Heart & Hands

Most people will be celebrating some type of holiday soon, if the haven’t done so already. It seems that December is a busy month for many with Christmas, Hanukkah, Kwanzaa, Festivus, and others. Many of these celebrations are centered on gift giving, and I for one, think it’s gotten too commercialized. I’d like to talk a little about giving without having to fight the mall crowds & spending a fortune.

I think the best gifts are those that come from the heart. They can be bought in a store, and there is nothing wrong with that, but taking the time to make something can be much more fulfilling for both parties. My family and friends love the things I make for them, and they are very affordable for me to make too! I get a warm fuzzy feeling knowing that whatever I make will be a treasured keepsake! I’ve given homemade, handcrafted gifts for a long time, and this year will be no exception. Let me show you a few of the things I’m giving this year.

First up, Name Frames!

These are pretty easy to make. All you need is some nice paper, a few embellishments (ribbon is my favorite!), and a frame. I get cheap ones for a few dollars at Wal-Mart! The example above is one I actually made for myself, but I have given several of these and they are always a hit. This one hangs above a doorway in my kitchen (if you’re wondering, Funk is my last name). Usually I just use the recipients first name. Cut out their name, decorate and you’re done!

The next gift is a new one for me this year. I found these great travel coffee cup mugs at Target that allow you to insert your own picture. The Custom Photo Mug is made by Aladdin and comes in both 16 oz. and 8 oz. size. I chose the 16 oz. size, and they were only $9.99. I used my digital scrapbooking skills and made my own little mini-scrapbook pages to put inside. For this one I used SuzyQ Scraps kit Thankful Hearts:

The last handmade gift I’ll share is the old standby: mini-albums! These are my go-to gift for my parents because they love to get little “brag books” filled with pictures of my son. There are so many ways to make them and I’m sure you already have your favorite way. I found this recently for $5.00 at my local Big Lots, and quickly grabbed several:
